Austria : Apfelstrudel

We stayed at our friends, Peter and Irmi who stay in the Strawhouse for a few nights in Austria. Peter loves cooking, one night he asked if I wanted to help him, of course !! We made apfelstrudel which is translated to apple tart or cake.

Here’s the Recipe :

Ingredients :

– 10 apples                                                                                                                                     – 4 puff pastries for 4 tins                                                                                                     – 50g of raisins                                                                                                                           – 1 egg                                                                                                                                               – 50g of caster sugar                                                                                                             – 2 or 3 teaspoons of cinamon                                                                                         – Rhum (optional)

Method :

Preheat oven to about 180 deg with fan

First peel roughly 7 or 8 apples and slice them up into small pieces (1cm x1cm) then peel the remaining apples and grate them with a cheese grater. If you want a rhum flavour them remember to soak your raisins in it. Lay your pastries out on greased tins. Get your cut up apple pieces and put them in a bowl. Add cinamon, your raisins and the sugar mix it all up. Once mixed add the grated apples. And mix one last time.

Now you can lay your apple mixture on the centre of the puff pastry in a rectangle shape 3 or 4 cm tall. Then whisk your egg in a seperate bowl and use a paintbrush on the sides to make them stick when you fold them in. So do the two small sides first and then put egg on the two long sides and fold in. Then flip it over and do some holes in it with a fork for the air to get through.

Leave in the oven for about 10-20 mins.

Serving : 

You can cut it up in slices and sprinkle some icing sugar over the top for serving. And VOILÀ !!

  2. I had no idea rum was a potential ingredient of apple strudel. Definitely one of my top five favourite things about Austria thought!

    1. Can’t beat a rum soaked raisin 🙂
