The secret ingredient in this chocolate cake? BEETROOT!
What better way to eat your veg! If you have a glut of beetroot in the garden, or if you just want to justify eating cake, then try this recipe to make a yummy, moist chocolate treat. Our 10 year old made this. It’s easy even for me.

250g cooked and well drained and zapped beetroot (use a food processor, or we used a soup zapper). Wouldn’t recommend pickled beetroot 🙂
1/2 tsp vanilla extract
200g any type of sugar (brown or muscavado is better)
250ml (vegetable) oil
225g plain flour
1 1/2 tsp bicarbonate/baking powder
tiny bit salt
6 tbsps cocoa powder
Preheat oven to 180 degrees centigrade
Combine wet things in a bowl (plus sugar). Combine dry things in another bowl.
Add the dry to the wet and best well together.
Pour into a tin and bake for 30 – 45 minutes (our last one was 35 mins).
